Fruits and Vegetables 1
| In Genesis 1:29-31 we read, "And God said, Behold, I have given you every herb bearing seed, which [is] upon the face of all the earth, and every tree, in the which [is] the fruit of a tree yielding seed; to you it shall be for meat. And to every beast of the earth, and to every fowl of the air, and to every thing that creepeth upon the earth, wherein [there is] life, [I have given] every green herb for meat: and it was so. And God saw every thing that he had made, and, behold, [it was] very good. And the evening and the morning were the sixth day."
A group of vegetables known as the brassicas contain a variety of plants consumed worldwide. They include the following: Broccoli, Cabbage, Cauliflower,Kale, Brussels, Turnips and others. They are low in calories but they supply nutrients. These include iron, carotenes, and the vitamins B, C, and E.
A 3 ounces serving of most brassicas supplies over 68% of an adult's total daily vitamin C requirement. Kale: Beta Carotene is abundant in kale. It is needed by the eyes to allow them to adjust to darkness. Turnips There is a great supply of Carbohydrates in turnips than in other brassicas, although turnips are still low in calories. Cabbage The dark outside leaves of a Cabbage can contain 50 times more carotene than the pale internal leaves. Phytonutrients in Cabbage known as indoles work on enzymes that can break down hormons involved in causing breast and prostate cancer. When eaten in the form of leaves or drunk as fresh cabbage juice, cabbages have anti-flammatory effects inside the body. They also have this effect when the crushed leaves are supplied externally to inflamed skin. Red Cabbage supplies the red antioxidant lycopene. Research has found that higher intakes of this antioxidant in the diet are associated with lower levels of heart disease in men. Broccoli This vegetable is very rich in cancer-fighting phytonutrients. It is one of the richest vegetable in iron. It also provides a range of vitamins and minerals, including vitamins C , E, and Culcium. As a good source of iron and beta carotene , broccoli may help to prevent anemia, especially in vegetarians. Children with respiratory infections, measles, and gastroenteritis have been found to have a significant drop in blood levels of vitamin A, The beta carotene that brocoli provides is converted into vitamin A, when the body's stores run low. Adding broccoli to children's diet may, in theory, help reduce childhood infections. The phytonutrients called isothiocyanates present in broccoli is also rich in vitamin C, which is required in increased amounts by smokers. Cauliflower: Plant chemicals called
glucosinolates give cauliflower their mustardlike flavor. This is particularly strong when the vegetable is eaten raw. Brussels Sprouts: Weight for weight, Brussels Sprouts contain the most folate of all the brassicas.
In Exodus 15:26, we read, " And said, If thou wilt diligently hearken to the voice of the LORD thy God, and wilt do that which is right in his sight, and wilt give ear to his commandments, and keep all his statutes, I will put none of these diseases upon thee, which I have brought upon the Egyptians: for I [am] the LORD that healeth thee."
